Huila, a southern region, is known for its complex and fruity coffees and has held a protected designation of origin since 2013. This cascara originates precisely from Huila. It is produced by Milton Pantevis on his Finca Garzon. Over the years, he has perfected the cascara drying process, achieving a balanced sweetness in this byproduct. These coffee cherry husks come specifically from washed Geisha, Bourbon, and Tabi varieties, which are then carefully sun-dried.
