We roast this single origin from Peru like a normal espresso and still retain the full spectrum of aromas from a washed process: normal coffee with nutty and chocolatey flavor notes. A special CO2 process is one of four proven methods for decaffeinating green beans. First, the coffee is treated with steam so that the beans swell and open up. Then, liquid CO2, which binds the caffeine, is added to the beans under high pressure in a container. Once the CO2 is saturated, it is removed, and the decaffeinated coffee is gently dried.
