Finca El Pezote got its name from a small animal, the “Pezote” or “Mishasho,” that lived on the farm. Originally, there were plans to produce coffee with a connection to the Pezote, but this was not realized because the animal is protected. Finca El Pezote is located around La Palma, Chalatenango, at 1,850 meters above sea level, and has an ideal microclimate for "specialty coffees." The high altitude and the cold, cloudy climate lead to a late ripening of the coffee cherries. Harvesting is done in three passes, which ensures that only crimson-ripe cherries are harvested.
For Hugo Pineda, the producer, it was a challenge because he could not rely on traditional knowledge about coffee. It was gathering information, researching, and the experiences of his father and other coffee farmers that ultimately led him to cultivate specialty coffees. This award-winning El Salvador Cup of Excellence Lot placed 12th in the 2024 competition. We are honored to roast this lot to perfection and offer it as a limited edition. We are sure that this washed, anaerobically fermented Pacamara will be a true experience.
