Guji is one of the zones of the Oromia Region in Ethiopia and was named after a tribe of the Oromo people. This Grade 1 micro-lot comes from the Guji Kercha station in Banko Michicha in the Kercha district of the Guji zone. The station works with 150 local smallholder farmers who cultivate regional varieties such as Kurume, Wolisho, Heirloom, and Dega at altitudes between 1,900 and 2,050 meters above sea level.
This lot was processed with an extended cherry fermentation in vacuum-sealed stainless steel tanks equipped with a CO₂ venting valve. The "Wine Process" got its name because the techniques used were adopted from the wine industry, although similar techniques can also be found in many fermented products. In short, coffee cherries are fermented in sealed, oxygen-deprived stainless steel tanks, with the temperature carefully monitored. An exceptional, exotic, and impressive coffee!
