Fazenda Vereda is located in Valle da Grama – a region known for reliable, clearly structured espresso profiles. Warm days, cool nights, and the consistent conditions of the high plateau create ideal conditions for dense, sweet beans with a distinct body.
The farm is managed by David Ottoni, a formative figure in Brazilian specialty coffee. As an agronomist and co-founder of the Brazilian Specialty Coffees Association, his name stands for technical expertise and consistent quality orientation.
With 1,200 hectares of coffee cultivation, Vereda is one of the larger farms in the region – and at the same time demonstrates that volume and precision do not have to be contradictory. The plants traditionally grow in the shade of avocado trees, which creates a stable microclimate and contributes to even ripening.
Controlled drying is crucial for the cup profile. Instead of classic hot air, the farm uses modern silo systems with dry air. This ensures homogeneous moisture reduction and preserves the structure of the core – the basis for clarity and consistency in espresso.
